Prosciutto di Parma uses only salt to preserve this delicate land prized ham. The story goes, the pigs eat the whey that is the by product of parmiggiano reggiano cheese, their waste is used to fertilize the fields on which the cows that produce it graze. and the cycle is complete.

Porchetta (Italian pronunciation: [porˈketta]) is a savory, fatty, and moist boneless pork roast of Italian culinary tradition. As a whole animal butcher, we make it using the whole side of the pig which includes the loin and belly with the skin on (pork chop and bacon). We season it with Salt, Pepper, Garlic and Rosemary, roll it and roast so that the skin is crispy, the meat is moist and the Porchetta is absolutely delicious.

If you're looking for Roasted Turkey breast, you are in for a real treat! Ours is seasoned with the same herbs as our Italian Beef, and roasted in house. We use only locally, ethically raised Turkey.  We offer this on a sandwich too.
