Housemade Italian Roast Beef
Inspired by Italian Beef from Chicago, our roast beef is rubbed with seasoning such as garlic, herbs (much of them coming from Mountain View Farm here in Easthampton) then slow roasted over water carrots and celery. This creates a meaty broth, which we use in our Italian Beef sandwiches, as well as maintain a moist juicy roast beef. Once you try this you may never go back to deli meat again!

House Roasted Turkey
If you're looking for Roasted Turkey breast, you are in for a real treat!
Ours is seasoned with the same herbs as our Italian Beef, and roasted in house.
We use only locally, ethically raised Turkey, usually from Misty Knoll Farms.

Housemade Ham

Housemade Pastrami
Pastrami is a very precise process and we take it from Farm to Table! We start with a brisket freshly cut from one of our animals and brine it in our own combination of salt and spices, often a few weeks is necesary to impart the flavor. At this point, one has corned beef but we take this brined brisket and hand mix spices such as coriander and mustard seed to create the crust. Then we smoke it and finally steam it in the oven. Our pastrami is an extraordinnary treat you will really love.

Porchetta
Porchetta (Italian pronunciation: [porˈketta]) is a savory, fatty, and moist boneless pork roast of Italian culinary tradition. As a whole animal butcher, we make it using the whole side of the pig which includes the loin and belly with the skin on (pork chop and bacon). We season it with Salt, Pepper, Garlic and Rosemary, roll it and roast so that the skin is crispy, the meat is moist and the Porchetta is absolutely delicious.
