Sweet or Spicy "Italian" Sausage
A recipe I got in Rome, our standard "sweet Italian" sausage. We use only locally sourced pork, mediterranean sea salt, pepper, garlic, white wine and fennel. The same for spicy but we add pepper flakes for spicy but you can still taste the sausage.

Sicilian Rope Sausage
Given my Sicilian roots, I had to offer something from there. The rope sausage is unique in that it has no garlic and lots of fennel.

Kielbasa
Kielbasa is the polish word for sausage. We asked many locals how their grandparents and parents made it, everyone had a unique family recipe or method, some all pork, unsmoked, others smoked beef and pork they all used garlic.
