Porchetta (Italian pronunciation: [porˈketta]) is a savory, fatty, and moist boneless pork roast of Italian culinary tradition. As a whole animal butcher, we make it using the whole side of the pig which includes the loin and belly with the skin on (pork chop and bacon). We season it with Salt, Pepper, Garlic and Rosemary, roll it and roast so that the skin is crispy, the meat is moist and the Porchetta is absolutely delicious.
